Apple Pudding

3 or 4 apples

1 cup sugar 2 Tablespoons butter

1/3 cup milk

1 egg

1/2 cup flour plus

2 Tablespoons

3/4 teaspoon baking powder

1/8 teaspoon salt

1 teaspoon cinnamon


Peel and slice apples. Butter a baking dish and spread the apples across the bottom. Sprinkle with 6 tablespoons of sugar and cinnamon. Cream balance of sugar with butter, adding beaten egg and milk. Sift flour, baking powder, and salt into the bowl, and mix the batter. Pour over apples. Sprinkle a little cinnamon on top and bake in 350 oven for 40-45 minutes. Serve with a pitcher of heavy cream. Serves 4.
